High Pressure Processing (HPP)

High Pressure Processing is a cold pasteurization technique by which products, already sealed in its final package, are introduced into a vessel and subjected to a high level of isostatic pressure, transmitted by water. It inactivates food-borne pathogens without the use of heat or artificial preservatives.

With high pressure processing, guacamole stays fresher longer — in most cases it extends shelf life by more than three times! By preserving healthy nutrients (often destroyed by heat pasteurization), foods prepared with HPP are healthier and taste better, too!
